OLEGARIO SOTO

Olegario Soto began his culinary career in 1980 as a line cook at the Como Inn in Chicago’s west loop.  With his natural talent and passion for cooking, Olegario quickly learned the art of Italian cuisine.  After this gaining this valuable experience and honing his skills, Olegario joined Tony Mantuano at Spiaggia in 1986, thus beginning his successful career with Levy Restaurants.  Olegario was quickly promoted to Sous Chef at Spiaggia and was involved in many high profile events, including the James Beard Dinner in New York City.  In 1994, Olegario was offered the exciting opportunity to open a new Italian concept in the Sears Tower, Mia Torre.  Olegario used his knowledge and expertise to play a key role in developing the menu and the coordinating the thousands of detail that go in to opening a restaurant.  He also offered his time and expertise to the Meal on Wheels Organization.

In 2000, Olegario transferred to Dos Hemanos, another Levy restaurant in the Sears Tower, as Executive Chef and was there for two years.  Since his promotion, Olegario has been involved in many projects in both Levy’s Restaurants and Sports and Entertainment venues.  His current role is overseeing the guest experience at US Cellular Field, play ball!
