Chipotle Marinated and Grilled Flank Steak

Ingredients

4 Ounces Chipotle Pepper, Chopped

1 Cup Olive Oil

1/4 Cup Raw Garlic Clove, Chopped

1 Tbsp Lemon Juice

1 Tsp Paprika

1 Pinch Salt to Taste

1/2 Cup Canned Tomato Juice

2 Pounds Flank Steak

Directions

1. Trim the Flank Steak of excess fat and sliver skin.  Set aside.

2. In a large bowl mix the first seven ingredients together.  Pour over the Flank Steak in a covered shallow dish and refrigerate for 24 hours.

3. Grill the Flank Steak over an open flame for 6-8 minutes on each side.  Let rest for 20 minutes before slicing.

To add summer "fireworks" to the Flank Steak, toss broccoli spears and potato wedges in balsamic vinegar and grill for 10-15 minutes.

Serves 8 people.
