Lobster Mashed Potatoes

Ingredients

Idaho Potato

Lobster - knucle & claw meat

Heavy Cream

Butter

Directions

Dice lobster meat.  Peel potatoes and boil in stock pot in salted water.  Melt butter in sauce pot and add lobster, sautee lightly.  Add heavy cream  and lobster stock and bring to a simmer.  When potatoes are soft, transfer to mixer While mixer is running, slowly add lobster cream mixture Season with salt and pepper.
