Herb Oil
Olive Oil 1 Quart
Fresh Rosemary 1/2 cup chopped
Fresh Thyme ¼ cup chopped
Fresh Oregano ¼ cup chopped
Fresh Italian Parsley ¼ cup chopped
Garlic ¼ cup chopped
Salt 1 Tablespoon
Cracked Black Pepper 1 Tablespoon
To Prepare the Steaks:
Preheat grill on high heat.
Season steaks with salt, pepper, garlic, and herb oil. Rub the seasonings into the meat; make sure to get all sides, top and bottom of the meat. Set aside and let marinate for up to 1 hour.
Place steaks on hot grill and cook to desired temperature.
At this point you put the meat on, turn it over and take it off. Do not fuss with the meat, flip it only once, the more you mess with it the worse it gets. For an extra thick filet you may want to use a slightly cooler part of the grill to cook it slower.
To Prepare the Herb Oil:
Wash and chop the herbs and garlic. Mix all ingredients together.
Store in refrigerator for up to 1 month.
