Chop Chop Cobb Salad with Honey Dijon Dressing

Ingredients

Honey Dijon Dressing:

2 Cups Dijon Mustard

1 1/2 Cup Rice Wine Vinegar, Seasoned

1 1/2 Cup Red Wine Vinegar

2 Tbsp Garlic, Minced

3/4 Cup Honey

4 Tbsp Oregano, Dry

8 Cups Olive Oil

1 Tbsp Fresh Ground Black Pepper

1 Tbsp Kosher Salt

 

Chop Chop Cobb Salad:

12 Ounces Romaine Lettuce, Cut in 1" pieces

8 Ounces Smoked Turkey, Diced

3 Ounces Red Onion, 1/4" Dice

4 Ounces Blue Cheese Crumbles

8 Ounces Grape Tomatoes, Halved

4 Ounces Bacon Cooked Crisp, 1/2" Dice

3 Ounces Kalamata Olives

6 Ounces Honey Dijon Dressing

 

Directions

Honey Dijon Dressing:

1.  Combine all the ingredients together in a Hobart mixer, except the olive oil.

2.  Add the olive oil gradually and whisk.

3.  Insure the vinaigrette is mixed thoroughly before adding to the salad.

 

Chop Chop Cobb Salad:

1.  Place Lettuce in a salad bowl.

2.  Add the next six ingredients and toss gently.

3. Serve the dressing on the side in a small ceramic bowl.

Serves 6 people.
