INGREDIENTS:
2 Ounces Spiced Up BBQ Sauce (see recipe below)
2 Pounds Fresh Shrimp, Peeled & Deveined, 13/15 size
1 Ounce Olive Oil
2 Ounces BBQ Seasoning
1 Teaspoon Honey
10 Wooden Skewers
Spiced Up BBQ Sauce
1 Poblano Pepper, Diced
4 Green Onions, Finely Chopped
2 Medium-Large Tomatoes, Diced
1 Ounce Kentucky Bourbon
.5 Teaspoon Cummin
2 Cups Regular BBQ Sauce
METHOD - Spiced Up BBQ Sauce:
In medium saucepan, heat bourbon until almost boiling. Add peppers and tomatoes and cook for 2 minutes. Add remaining ingredients and heat to simmering, stirring constantly. Remove from heat and set aside.
METHOD - Texas BBQ Grilled Shrimp:
Combine oil, honey and BBQ seasoning in large mixing bowl. Add shrimp and coat completely. Let marinate for 1 hour. Skewer 3 shrimp onto each skewer and baste with Spiced Up BBQ Sauce. Grill on pre-heated flattop grill or over open flame pit for 2 minutes on each side or until shrimp turn pink. Re-Baste with BBQ Sauce if desired.
