GULF COAST SHRIMP SALAD SANDWICH

Super Bowl XLIII at Raymond James Stadium

Ingredients

1 pound – Florida Shrimp, medium to large size
¼ cup – celery, diced
1 tablespoon – parsley, chopped
½ cup – Louis Dressing (recipe below)


Louis Dressing:
1 cup – mayonnaise
¼ cup – chili sauce
2 tablespoons – red wine vinegar
2 tablespoons – green onions, chopped
To taste – salt
To taste – white pepper

Directions

Chef’s Notes:
Peel, devein and clean the shrimp. Poach the shrimp in boiling water for 3-5 minutes, until they are fully cooked. Once there, remove the shrimp from the boiling water and let cool completely. Once cool, lightly toss the shrimp, celery and parsley with the dressing. To finish, place the mixture on your favorite hoagie roll with a slice of lettuce.

Louis Dressing- Chef’s Notes:
To prepare the Louis Dressing, combine all the dressing ingredients together in a medium bowl and mix well. Next, adjust the seasoning to taste with the salt & pepper and set aside for later use.
