Chef Angela's Lemon Raspberry Thumbprints (Makes 4 Dozen Mini Cookies)

Ingredients

1 cup butter

1/3 cup shortening

1 1/2 cup sugar

1 tsp. Vanilla

4 large eggs

1 1/4 cup whole milk

3 cups flour

3 tsp. baking powder

1 jar raspberry preserves

Directions

Cream butter, shortening and sugar together until fluffy.  Run mixer at medium speed and add vanilla and eggs one at a time, mix until blended.  Add milk and mix until smooth.  Sift flour and baking powder together and add slowly to the mixer until smooth and consistent looking.  Scoop out onto an ungreased baking sheet, stamp center with your thumb and fill with a teaspoon of raspberry preserves.  Bake at 325 degrees for 12 minutes.
