The season for wearing white may be over, but summer doesn’t officially end until Friday, September 22nd. Say goodbye to summer with the final simple and nutritious recipe in our Dietitian-Approved Summer Recipe series from Levy’s registered dietitian, Patty Coleman.
The Perfect Pair: Sausage & Salad:
- 4 (4 oz.) grilled Polish sausages
- 2 heads of romaine lettuce (chopped)
- 1 pint grape tomatoes (halved)
- 1/4 diced Spanish onion
- 1/2 c mild giardiniera
- 1/2 c red wine vinegar
- 1/4 c olive oil
- Black pepper to taste
- Dried basil
Toss salad ingredients together in a large bowl. Season to taste. (Serves 4)
* Patty’s tip: Skip the salt! The sausage and giardiniera already provide enough saltiness.
